HONEY GARLIC ROASTED CARROTS

Ingredients
  1. 2 pounds baby/thin carrots, peeled, tops chopped off or to 2 inches*
  2. 1/4 cup apricot preserves
  3. 2 tablespoons honey
  4. 2 tablespoons olive oil
  5. 1 tablespoon butter, melted
  6. 1 teaspoon balsamic vinegar
  7. 1 teaspoon Garlic Powder
  8. 1/4 teaspoon Ground Mustard
  9. 1/4 teaspoon TheoThyme Leaves
  10. 1/8 teaspoon Ground Cumin
  11. 3/4 teaspoon salt
  12. 1/8 teaspoon pepper
Instructions
  1. Preheat oven to 375 degrees F.
  2. line a baking sheet with foil and lightly spray with nonstick cooking spray
  3. Add carrots to the center and keep aside.
  4. In a medium bowl, whisk together all remaining ingredients and pour over carrots. Toss until evenly coated.
  5. Line carrots in a single layer.
  6. Bake for 30-45 minutes depending on carrot thickness, until fork tender, stirring after 20 minutes.
  7. Garnish with parsley if desired.
