ROASTED ROOT VEGETABLES WITH HONEY AND HERB GLAZE

Ingredients
  1. 2 tablespoons – Theo Organics Himalayan Wildflower Raw Honey
  2. 1 tablespoon - butter melted
  3. 1 tablespoon - extra virgin olive oil
  4. ½ kilo - small potatoes quartered
  5. ½ kilo - carrots cut into ¾ inch pieces. Halve thick pieces.
  6. ¼ kilo- red beets (about 3 medium) peeled and quartered
  7. ½ cup - sweet onion sliced
  8. 1 - small shallot sliced lengthwise
  9. 1 tsp crushed - Theo Organics Thyme
  10. 1 tsp crushed - Theo Organics Oregano
  11. 1 tsp Theo Organics Himalayan salt Natural
  12. 1 tsp - ground pepper
Instructions
  1. Preheat oven to 450°F.
  2. Line a large rimmed sheet pan with parchment paper. Set aside.
  3. In a small bowl, whisk honey, butter and oil together. Set aside.
  4. In a large bowl, toss potatoes, carrots, beets, onion and shallot with honey mixture.
  5. Add thyme, oregano, salt and pepper to bowl and mix to combine.
  6. Arrange vegetables on prepared sheet pan and roast for 35-40 minutes, stirring once, until tender and lightly browned.
